Agar Dessert

Ingredients: |
2 1/4 cups juice (NOTE 1)
3 tablespoons agar flakes (NOTE 2)
2 teaspoons granulated white sugar
|
Instructions: |
Put 1.5 cups juice into a 1 quart pot.
Heat to a boil and add agar and sugar.
Boil for 10 minutes, stirring frequently. (NOTE 3)
Turn off heat, add remaining 3/4 cup cold juice.
Mix.
Pour into dishes (4 1/2 cup servings).
Chill in the refrigerator for 2 hours.

Serving Information: |
Yields 2 cups of jelled juice.

Notes

NOTE 1:
About proportions: if you are just using water (not fruit juice), a powdered or concentrated flavoring and sugar, less agar is needed; a minimum of 1 tablespoon agar per 1 cup of water, but I would recommend a little more.
NOTE 2:
I used Eden Agar Agar Sea Vegetable Flakes. Results with other brands may vary. Eden is expensive, but the fishy taste has been fully removed. Also, with Eden agar flakes 12 Tablespoons = 1 oz by weight = 28 grams. If you use a different brand of agar flakes, check the weight to volume ratio and use an equivalent weight for the recipe. Unfortunately the recipe and proportions on the back of the Eden package are incorrect.
NOTE 3:
Agar-agar does not have exactly the same properties as animal gelatin. Agar needs to be boiled and stirred in order to dissolve properly, otherwise your end product with have inconsistent texture.
